Description

Name of Estate/Domaine:
Achaval Ferrer | "Quimera"

Produced by:
Achaval-Ferrer is a prestigious estate in Mendoza, Argentina, celebrated for its commitment to minimal-intervention winemaking, old rootstock vineyards, and high-altitude terroir. Their philosophy centers on blending tradition with precision to create expressive, elegant red wines.

Country/Region:
Mendoza, Argentina,  sourced from multiple sites across Luján de Cuyo and the Uco Valley. The vineyards feature well-drained alluvial soils, volcanic ash, gravel, and sandy loam. Elevations of 700 - 1,100 m ensure significant diurnal shifts, promoting balanced ripeness and freshness.

Grape/Blend: A Bordeaux-style blend of Malbec, Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot.

ABV: Approx. 14%

Tasting Notes:

  • Appearance: Deep ruby with purple hues, bright and concentrated.
  • Aroma: Blackberries, plums, tobacco, earthy minerals, herbs, and subtle spice.
  • Palate: Medium to full-bodied with refined tannins, vibrant acidity, and a mineral-driven backbone. Dark fruit, bay leaf, chocolate, and fresh herbs lead into a long, balanced finish with chalky texture and lingering savory tones.

Terroir:

The vineyards span diverse terroirs of Mendoza, with soils of alluvial origin, volcanic ash, gravel, and sandy loam. High elevations ensure optimal freshness, slow ripening, and aromatic intensity.

Viticulture:

  • Old rootstock vineyards cultivated with minimal intervention.
  • Focus on expressing terroir and natural balance.

Vinification:

  • Fermentation with precision to preserve varietal character.
  • Careful blending to achieve harmony and structure across varieties.
  • Aged to develop texture, elegance, and complexity.

Food pairing:

  • Grilled red meats and lamb.
  • Hearty stews and roasted vegetables.
  • Aged cheeses such as manchego or pecorino.
  • Dishes with earthy herbs, such as rosemary and thyme.

The name “Quimera,” inspired by the mythical Chimera, reflects the creative and ambitious philosophy behind the wine’s blend, an “impossible quest” toward perfection.
