Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

Delicious, easy drinking lightly sparkling style of Prosecco with a mischievous sapidity as an Italian might say. The nose suggests blanched almonds, white flowers and pear skin; the palate is soft and clean with apple and quince fruit flavours with a naturally off-dry finish.

The soils are deep and are made up of a composite of rock and sand, containing a lot of clay and sometimes rich in iron oxides.

- Fermentation of the musts in steel tanks
