Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

Delicate nose of citrus and white flowers, there is freshness on the palate and a salty, iodine-tinged character. A touch of prickliness from the lees and a crisp lemony finish.

Terrior:
Soils are sandy and silty on a schistous and gneiss bedrock. The soil is quite warm, and very well-drained on slopes that face South-West, in the village of Le Landreau.
Vinification:
Manual harvested
Cold clarification of grape juice
Fermented in small, underground stainless-steel vats
Gently pressed using a pneumatic press
Controlled ferment at 20oC for 3 weeks
8 months ageing on the lees in stainless steel vat
No malolactic fermentation
Filtered and fined at bottling
Small amount of sulphur added after the fermentation and before ageing.
