Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

Tasting Notes
Ripe red/dark fruit aromas and that characteristic garrigue and pepper notes. Lovely softness in the mouth with velvety tannins and confit fruits building across the palate, hints of tobacco and leather and a nice spine of acidity from the Syrah as well as some spicy blackcurrant fruit.

Ample summer sunny days and a cooling breeze blowing down off of the Montagne Noire at night.

Vinification:
- Fully destemmed
- lightly crushed
- Fermented at cool temperatures in traditional concrete cuves for about 15 days.
- Matured in tank for 8-15 months
- Bottled unfiltered for added complexity.
