Description

Name of Estate/Domaine:
Château St. Thomas | Les Émirs

Produced by:
Château St. Thomas is a family-run wine estate located in Lebanon’s Bekaa Valley, established by the Touma family. They combine modern winemaking techniques with respect for tradition, drawing from a terroir enriched by altitude and Mediterranean influence.

Country/Region:
Lebanon – Bekaa Valley, situated between mountain ranges at 1,000–1,200 meters elevation. Warm days promote ripeness while cool nights preserve freshness. Diverse soils and a favorable microclimate allow for high-quality expression in red blends.

Grape/Blend: Approximately 85% Cabernet Sauvignon, 10% Syrah, 5% Grenache

ABV: Approx. 13–14%

Tasting Notes:

  • Appearance: Deep, thick ruby-red color with garnet undertones.
  • Aroma: Complex bouquet with black and red cherries, plum, vanilla, spice, and a touch of licorice.
  • Palate: Full-bodied, persistent, and well-structured, with elegant, firm tannins and a richly textured finish. Noble and sophisticated character.

Terroir:

The Bekaa Valley’s altitude, climate, and diverse soils provide ideal conditions for red blends, balancing ripeness, freshness, and aromatic complexity.

Viticulture:

  • Vineyards cultivated with respect for terroir and sustainable practices.
  • Careful selection and blending to achieve structure, aromatics, and depth.

Vinification:

  • Aged 12 months in oak barrels and further refined in bottle.
  • Fermentation and blending to preserve structure, aroma, and texture.
  • Minimal intervention to highlight the purity and elegance of the blend.

Food pairing:

  • Grilled red meats, lamb, or beef.
  • Hearty stews and roasted vegetables.
  • Mature or semi-aged cheeses.
  • Dishes with aromatic herbs and spices.

The name “Les Émirs” evokes a sense of dignity and refinement, reflecting the wine’s noble and sophisticated profile.

Best served at 16–18°C to fully appreciate its structure, aromatics, and elegance.
