Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.

The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

Terrior:

The terroir is a complex mosaic of soil types, principally clay-limestone with some stones, and sand and silt in some areas. The limestone in this part of the South-West of France is called ‘Molasses’, which is a soft stone, made from limestone and which containing organic matter such as fossils of pre-historic sea creatures and shellfish.

Viticulture:

Vines are planted in three different zones, and Guillaume de Conti explains that there are different expositions within each zone, so there are multiple expositions for these Sauvignon vines. All vines are cut with the Guyot Simple cut.
