Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry .

Orange yellow in colour. The nose has aromas of herbs, hay, citrus fruit, candied fruit and ginger whilst the palate is fresh and savoury with delicate tannins and a long finish

Vines grow on local ‘ponca’ soil (friable calcium/limestone marl) mixed with clay.
Viticulture
Grapes and estate are organically certified.
Vinification:
- Manual harvested
- Fermented in open top wood and chestnut fermenters
- 20 days skin contact maceration
- Indigenous yeast
- Ambient ferment
- Matured for 3 years on the lees in barriques, assembled in stainless steel and rested in bottles before release
- No filtration
- No sulphur until bottling.
