Tasting Notes
Complex and intense nose with notes of ripe plums, raisins, red berries, spices, and beautifully intertwined wood. On the palate flavours of deliciously juicy ripe fruit nicely balanced with wood and a soft long finish
Terroir
The climate of the Veneto is sub continental ,the presence of the sea and the Alps protect it from north winds, The soils are unique to their particular ridge, and are composed of limestone with a reddish hue.
Viticulture
Certified organic, but uses biodynamic farming methods.

Vinification:
- Grapes are dried in a south facing breeze cooled drying loft in small wooden crates for about 5 months.
- Destemmed.
- Maceration and fermentation in open oak vats.
- Maturation in French oak tonneaux for 4 years and bottle for 12 months.

Braised beef in Amarone, Lepre in Salmi, or matured Monte Veronese cheese.
