Grapes sourced from biodynamically farmed vineyards across 7 limestone hillsides in Alsace, France, providing excellent conditions for ripening and flavor development.
Vinification:
Hand-harvested grapes undergo 6 months of maceration in 2022, followed by another 8 days in 2023. Lightly filtered and aged in wooden vats. No sulfur added.
Food Pairing:
Pairs beautifully with seafood dishes like grilled octopus and shrimp ceviche, as well as vegetarian dishes like roasted root vegetables and creamy risottos. Also complements aged cheeses and charcuterie boards.
