Clay with limestone terroir near the Thau lagoon – limestone brings acidity
Viticulture:
Coastal Mediterranean Climate. Part machine, part manual harvest.
Vinification:
All grapes are 100% destemmed.
Fermented in stainless steel vats at low controlled temperature
Aged for a further 3-4 months in stainless steel
Lightly filtered, fined (with isinglass) and a small amount of sulphur added
