Natural wine has no uniform definition. Tasting Notes

An exuberant wine that is pale amber in colour. Full of character, dry, tannic with aromas of yellow plums, dried flowers and more. A palate that is clean and fresh with salty acidity and good minerality.

25% Malvasia, 25% Marsanne, 25% Ortugo, 25% other local varietals

Terroir:

Southern exposure. This blend comes from vines planted in 2008/2009, grown on the highest portion of Giulio’s sloping, vineyards. Medium calcareous soils, sand and white pebbles.

Viticulture:

Organic methods used in the vineyards. 

Vinification:

Manual harvest in September
Intensive vineyard sorting and de-stemming
The most yellow and ripest grapes macerate for 1 - 2 weeks, the rest are pressed directly
The musts are then combined mid fermentation, in stainless steel.
Indigenous yeasts only
The wine remains on lees without stirring until spring time, when bottling takes place.
No filtration
No Fining
No added sulphur
