Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

The low Alban hill chain to which the Barolo zone belongs, is characterised by a cold temperate micro-climate. Even so, the summers are hot and dry and Winters are cold with generous snow precipitation.

- 100% destemmed
- Stainless vat
- Maceration for 3-4 days
- Indigenous yeast
- Controlled ferment at a maximum of 29°C.
- Aged for 6 months in Slavonian oak casks and a further 6 months in cement tanks.
- Malolactic fermentation in cement tank.
- No filtration.
Cured ham, salami, pasta and pizza and seasoned cheeses.
