Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.

The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry

Tasting Notes
Aromatic and floral wine with tones of lime, ripe yellow fruits and minerality. The palate is fruity with tones of honey, flowers and apples. A very balanced vintage.

Terroir
Mild Mediterranean climate throughout the year. Vines grow on local ponca soil (friable calcium/limestone marl) mixed with clay.

Viticulture
Grapes and estate are organically certified.

Vinification:

  • Manual harvested.
  • whole cluster and bunches gently pressed.
  • fermented with indigenous yeast.
  • Aged on lees lasted 20 months,
  • 50% in stainless steel vats, 
  • 50% in oak foudre.
  • Undergoes full malolactic fermentation.
