Palate: light to medium-bodied with bright acidity, fine tannins, and flavors of red currant, pomegranate, subtle smokiness, and forest floor. Elegant and expressive.
Terroir:
Sourced from old Pinot Noir vines grown on clay and limestone soils in the village of Ammerschwihr. The cool Alsace climate enhances the grape’s finesse and aromatic clarity.
Vinification:
Hand-harvested grapes undergo spontaneous fermentation with native yeasts.
Minimal intervention, no sulfur additions, and aged in old Alsatian foudres to preserve the purity of the fruit.
Unfiltered and unfined.
Food Pairing:
Pairs beautifully with roast poultry, mushroom-based dishes, grilled salmon, or soft cheeses like Brie and Camembert. Also lovely with lentil or beetroot salads.
For optimal preservation: Store at around 10°C to 12°C (50°F to 54°F) away from light. Serve slightly chilled at approximately 14°C to 16°C (57°F to 61°F) for ideal drinking.
