Tasting Notes
Intense ruby red in colour with a garnet rim. The nose has aromas of ripe fruit, black cherry and plum and spices with a balsamic note. The palate is structured, velvety and vigorous with an acidic and savoury component which balances the wine. The finish has beautiful sensations of bitter almond, black cherry and blackberry.

Terroir:
The vineyard is located 365m above sea level with vines planted in a north-south orientation and is a mix of clay and limestone, rocky and packed with minerals. Thin layers of red earth mixed with limestone and silica sit on huge fossil-rich monolithic reefs confirming the origin of this land and the name of the locality Spinomarino recalls its original shape: coastal prominence in the strait of sea which submerged the low surrounding lands.
Viticulture:
The family ensures the greatest care in every detail: organic farming, no irrigation, spontaneous grassing with green manure. Use of a modern espalier version of the Alberello Pugliese training method with double head to fruit, vines are planted to a density of 4000 vines per hectare.
Vinification:
Fermentation of the must with skin contact for 240-300 hours

Aged for 12 months in stainless steel tanks, 12 months in 750 litre Slavonic oak and 6 months in bottle
Application of music therapy to optimise spontaneous micro-oxygenation and improve the fining of the wine
Natural malolactic fermentation
No addition of sulphites during the vinification process, only after malolactic fermentation.
