Terroir:
Temperate, continental climate, shielded from cold northwesterly weather systems by the hills to the west of Beaujolais. High sunshine hours are cooled by gentle influences from the Mediterranean Sea to the south. pink granite Soil.
Viticulture:
Agriculture raisonnée, 25% grassed, vigorous pruning, ground up vine shoots are used to provide organic matter in winter, if needed.
Vinification:
Hand harvested with careful selection to ensure the best berries.
Stainless steel vats
Semi-Carbonic maceration
Pumping over, once or twice daily.
Run-off juice is drawn into high potential vats to improve extraction of flavours and tannins.
Maturation in old oak tuns (225litres) before bottling the following spring (after easter)
