Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry

A full bodied, ripe and juicy red from the sun-drenched Italian island of Sicily. Packed with ripe black cherry fruit and hints of pepper, this supple wine is unoaked and has deliciously refreshing acidity.
Terroir
Blessed with consistently bright sunshine and reliably moderate rainfall, Sicily's classic Mediterranean climate is ideally suited to the production of wine grapes. The warm, dry climate means that mildew and rots are kept to a minimum, particularly in well-ventilated areas which benefit from coastal breezes.

Vinification:
- Short maceration of a week of whole bunch (40%) and destemmed (60%) grapes.
- Wild yeast.
