Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.

The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

Tasting Notes

Dark red colour. Very fruity nose, both powerful and elegant. Very round and soft on the palate with great fruit intensity reminding of blackberries and small red fruits.

90% Malbec, 5% Merlot, 5% Tannat

Terrior:

The vines of Château du Cèdre root in two different types of soil: The terroirs, composed of stony clay and limestone, give straight wines with fine tannins, while more powerful and dense wines come from soils composed of clay, sand and a large quantity of pebbles. The vineyards for this wine are located on the 1st and 2nd terraces of the Cahors Appellation.

Viticulture:

The vines are worked organically, eschewing herbicides and chemical fertilisers. They don’t spray against rot; extensive manual work is carried out - aggressive pruning and green harvest (reducing to 4-5 bunches per vine) to reduce yields; leaf stripping for greater sun exposure and air circulation; Organic composts.

20 months in foudre and barrel
Short maceration
Light filtration before bottling
Storage in a temperature-controlled warehouse
