Grape/Blend
70% Cabernet Sauvignon, 30% Mourvèdre, Pinot noir, Sauvignon, Petit Manseng and Muscat
Terroir:
White Lutetian limestone and argilo-calcaire (limestone-clay). The vineyard is surrounded by garrigue and fores.
Viticulture:
Dry winter and spring, followed by an exceedingly hot summer and just the right amount of rain in August meant grapes were picked at ideal maturity.
Vinification:
- Manual harvest 100% destemmed
- Immediate bleeding of Cabernet Sauvignon grapes.
- Free-run juices are fermented in closed tanks so as to retain the fermenting gas.
- 3-4 months in closed stainless steel tank
Food Pairing
as an aperitif with nibbles such as anchovies, olives, with quiche Lorraine, or delicious with most desserts.
