Natural wine has no uniform definition. It is a general term used to describe artisanal wine made using organically and/or biodynamically grown hand-picked grapes which are vinified with little or no intervention. Winemakers often rely on indigenous yeast to catalyse natural fermentation, avoiding the use of any chemicals, additives or sulphites.
The result is wine which is alive, energetic, vibrant and unexpected – a welcomed contrast to the industrial practices of the wine industry.

Tasting Notes
Bread and caramelised pears on nose. Palate full of citrus, sour apples and hint of butter.

Terroir
The Pinot Noir and Chardonnay vines are planted all mixed up and close together in this plot, so they are picked together, crushed together and vinified together. The vines are twenty years old.

Viticulture
Organic certified.

Vinification:

  • Wild yeasts.
  • Without temperature control. In Burgundy the ambient temperature is naturally cold and that, in the barrels the wine does not heat up easily during fermentation.
  • 3 weeks fermenting in barrique Bourguignonne.
  • Full malolactic fermentation.
  • Six months ageing on lees.
  • No filtration
  • No fining 
  • A small amount of sulphur (2g/litre) was added once the malolactic fermentation ended.
  • This 2014 vintage of Portlandia spent between 19-20 months ageing in bottle on the rack.

Food Pairing
Roast chicken, duck breast or salmon.
